         DRIED CHILI CROCODILE MEAT

  

  Dried-Chilli-Crocodile-Meat-pic

Ingredients (Serving for 2)
150-300g crocodile meat
100g dried chilli
2 pieces red chilli (sliced)
2 cloves garlic (sliced)
Ginger as desired

Marinate with
1/2 teaspoon baking soda (or a few drops of meat tenderizer)
1/2 teaspoon salt
1 teaspoon suger
3 tablespoons water
1 tablespoon Shaoxing wine

 

  Seasonings
2 tablespoons chinese vinegar
1 tablespoon sugar
1 tablespoon tomato sauce
1 teaspoon Shaoxing wine
1 teaspoon cornflour
Pepper to taste

 

 


 

Directions   

1) Marinate the crocodile meat for 20 minutes then add 2 teaspoons cornflour and 1/2 tablespoon oil.
2) Heat the wok with 2 tablespoons of oil and sautee meat lightly.
3) Remove meat from wok, fried the rest of ingredients until fragrant.
4) Add meat and stir fry for 3 minutes then add seasonings.
